PAULA

Paula is Carlsberg Byen’s new culinary landmark – a modern à la carte restaurant where classic French craftsmanship meets Nordic purity and the aromatic depth and precision of Japanese cuisine. At Paula, ingredient quality, bold flavour, and indulgence are always at the forefront.

Great taste starts with great ingredients, and that’s why Paula’s menu is shaped by sustainably caught fish, organic Danish vegetables, and wild game.

At Paula, great craftsmanship and uncompromising quality come together in relaxed and welcoming surroundings, and in the warmer months, Paula’s sunny outdoor terrace is also available for events and gatherings.      


DOLORES is Carlsberg Byen’s global citizen – a restaurant that uses the whole world as its culinary playground. In the kitchen, there’s one guiding principle: the flavour and the ingredients must be outstanding.

Dolores is inspired by San Francisco’s colorful Mission District – a true melting pot of food and culture, drawing inspiration from many of the world’s different cuisines.

So, while Danish ingredients make up the foundation of the menu, Dolores often looks to the world for flavours, inspiration, and a few special ingredients here and there.   

Dolores is a locally rooted world cuisine set in stylishly designed and relaxed surroundings, customizable for all kinds of occasions – including meetings, parties, and receptions.
There is also a large, sunny outdoor terrace, perfect for summer parties and celebrations.

RADIO is a modern, down-to-earth restaurant located across from Copenhagen’s historic Radio House. Named after its iconic neighbor, RADIO was founded in 2011 by entrepreneur and Noma co-founder Claus Meyer to showcase the excellence of Danish produce at accessible prices. In June 2025, the Michelin Guide awarded RADIO a ‘Bib Gourmand’ as a recognition of a high quality level at reasonable prices.

While Danish seasonal ingredients form the backbone of RADIO’s cuisine, the kitchen often looks to Asia and to ingredients like miso, yuzu kosho, white soy, and koji to push the flavours forward. 

RADIO is both informal and innovative, deeply rooted in Nordic seasonality, while at the same time offering a refreshing and flavourful outlook on the world.


Almanak i Operaen is a seasonal tribute to the taste of Denmark, set in one of Copenhagen’s most emblematic landmarks. Open to everyone – with or without an opera ticket – Almanak serves both lunch with a view, seafood feasts, and evening menus, all in an elegant setting with one of the best views in Copenhagen.

The menu follows the Danish seasons closely, with a special emphasis on sustainably caught Nordic seafood and Danish organic produce. Occasionally, exceptional ingredients like seasonal truffles make their way onto the menu, but great Danish ingredients remain at the heart of our kitchen – all year round.

Given Almanak’s location, the restaurant offers several venues across the Opera House. Therefore, Almanak is an ideal choice for both small and large gatherings and celebrations, product launches or conferences. 


KILDEN i Haven is a contemporary Danish brasserie celebrating the best local produce, traditional techniques, and Danish seasonal flavours. Located in the heart of Denmark’s most magical garden, KILDEN bridges tradition and innovation. Head chef Christian Hoffmann’s cuisine brings together purity and intensity of taste, traditional Danish pickling techniques, and craftsmanship to form a flavourful snapshot of the current Danish season. The lunch menu features some of the finest open-faced sandwiches in the country, while the evening menu offers contemporary takes on classic Danish cuisine.

KILDEN is located in a green oasis in the heart of Tivoli and features its own beautiful garden and greenhouse, ideal for outdoor summer dinners. Inside, the bright restaurant offers both small and large rooms suitable for intimate gatherings as well as larger events. With separate meeting rooms, corporate events of all formats can be tailored to fit your needs.

At LOCA Gruppen, unforgettable taste experiences go hand in hand with a responsible approach to the world around us. We see sustainability as more than just a matter of where the carrots are grown – it’s also about fair working conditions and creating a work life that’s sustainable for the people behind the food. We want to help shape a restaurant industry that people want to be part of – also after they’ve started a family.

That’s why, in 2021, we created a Manifesto based on several of the UN Sustainable Development Goals. Our manifesto sets the course for our sustainability efforts and overall business model – and all LOCA restaurants are guided by it.

To ensure progress and transparency, we also publish an annual sustainability report. In it, we set new goals for our sustainability work – both for each individual restaurant and for LOCA as a whole. It’s our way of taking responsibility – for our ingredients, for our people, and for the planet.
