All our restaurants are located in the Copenhagen area, and have in common that, despite very different concepts and price levels, they all live up to our Manifesto for sustainable gastronomy and the values we have set up for the LOCA Group. Therefore, you will also find, for example, a strong focus on seasonality and raw materials at the otherwise very different places to eat.
More than the good taste of Denmark
At LOCA Restaurants, we give our guests the good taste of Denmark all year round. But we want more than that.
Every time we send a plate out of the kitchen, we want to be sure that the good taste of Denmark also leaves a good taste in the mouth of, for example, our greengrocer, winemaker and employees. That the shellfish dish does not contribute to overfishing, or that our businesses create greater CO2 emissions than absolutely necessary.
We do this because enjoyment and consumption have historically contributed to man-made problems such as climate catastrophes, inequality in third world countries and lack of diversity in the industry, but that does not have to be the case. Gastronomy must not cost the climate account or increase inequality - on the contrary.
At LOCA Restaurants, we work purposefully to ensure that gastronomy becomes part of the solution to the challenges, for example when we choose ingredients and suppliers carefully, enter into partnerships that make a difference in vulnerable areas, or run a restaurant with the heart in the right place.
